Preparing the Biscotto Stones
When you receive your stones, they may still have some production dust on the surface. This can easily be brushed off with an oven brush, or wiped with a slightly damp cloth.
Once the stones are in place, they needs to be properly conditioned to withstand high temperatures. We recommend starting by baking the new Biscotto stone at half heat for 60 minutes. Then allow the stones to cool completely to room temperature (approx. 20°C). Note that since the Biscotto Stones is designed to retain heat, this cooling process can take several hours. Once the stones are cool, bake it again at full heat for another 60 minutes, and let them cool down to room temperature again. After this, the stone is ready to use. This process takes a few hours due to the necessary cooling times, but it only needs to be done once before using your Biscotto Stones for the first time.
Maintaining the Biscotto Stones Over time, your Biscotto Stones may accumulate burnt flour or toppings that come into direct contact with the surface. You can easily burn off these residues by keeping the oven running at a high temperature for a while after baking your last pizza. Once the oven has been on for some time at its maximum temperature, the residues will turn to ash and can be brushed off (once the stones has cooled slightly) with an oven brush. Avoid pressing too hard with the brush, as this may cause unnecessary scratches. In most cases, light brushing is all that’s needed. If you want to clean the stones more thoroughly, you can wipe it with a slightly damp cloth – but only once the stones is completely cold.
Important: Never expose your Biscotto Stones to direct water or soap, as this can cause it to crack the next time it is heated.
